Instead of a centerpiece, what about this...??

I think it's a very nice idea...the only thing that I would do is make sure that you include a little sign that says something about the centerpieces being edible. The last thing you want is to spend the money on these and have no one eat them because no one thinks they are edible...but, I think it's a great idea. However, I would put something different on the headtable....don't want anything to messy next to your dress.
